I made this last night, and was surprised how good it was. I had never used canned shrimp before. When I opened the can I thought, yuck, it smells like cat food. I didn't have high hopes for the recipe, but it turned out to be yummy.

Shrimp Spread

1 (8 oz) pkg. cream cheese
1 can of tiny shrimp
3 T. mayonnaise
2 or 3 shakes of Worchestershire sauce

Drain the shrimp and chop it into smallish bits. Stir together all ingredients. Make it at least an hour before serving so flavors have a chance to blend. Serve on party crackers.

I tried that shrimp spread once, it was tastier than I thought it would be. I had the same reservations about the shrimp. It was good, but next time I'll use the frozen baby size.

Hmm, I saw a reicpe for shrimp on a english muffin and then baked or broiled... I'll see if I can find that one again too.

I LOVE shrimp, I might have to make it myself to taste test it so Lioness wouldn't make something inferior - ya know, just protecting the Lioness...

That's what a true friend would do, Gma!

These all sound fantastic. With the shrimp one...do you think I could use crabmeat instead?

The absolute least I could do for ya Lioness...

Crab should be a very easy switch for the shrimp, Lioness.

Here's the Shrimp recipe I talked about-

Shrimp Delight

1 C firmly packed shredded cheese
1 C mayonnaise
1 can shrimp, drained
1/2 t curry powder
salt to taste
1 med onion, chopped fine
5 english muffins cut in fourths

Mix cheese, mayo, curry pdr, salt, shrimp and onion. S[read on muffin quarters and roil 5 minutes, until bubbly. Watch closely. This one should work with crab too.

Here's one you don't have to cook but might not work as well with Crab.

Shrimp Canapes

1/4 C softened butter
1 t Worcestershire sauce
small rounds of toast
16 cooked cleaned shrimp

Cream butter with Worcestershire sauce, spread on toast rounds. To[p each with 1 whole shrimp.

The Pioneer Woman (Ree Drummond, blogger extraordinaire) has another "topped" English muffin recipe (this one has egg, bacon, cheese, mayo, and seasonings):

Make-ahead Muffin Melts (say that three times fast!)

What I love about her recipes is that she includes not only step-by-step instructions but a photo with almost every step -- and it's a photo from her actual making of the food item. w00t!
Her photos are enough to get your mouth a'droolin' and your tummy a'rumblin'.

Ohhh, I checked out her apps... there is a jalapeno/cream cheese/bacon that looks wonderful and e-a-s-y!

It's simply cut the jalapeno's in half lengthwise (about 2" long jalapenos), scoop out the seeds, fill with softened cream cheese, wrap with a piece of bacon (bacon is cut in thirds first). Bake 375* 20 to 25 minutes.

Don't those sound yummy?

Oh my yes! Everything is better with bacon, cheese and jalapenos so just bacon, cheese and jalapeno has to be superb.

Elena, I clicked, I looked, I drooled. Oh my word, those look good!

Here's one that fits both the "crab" and "make ahead" criteria.

Crabmeat Rolls

1/4 lb Velveeta cheese
1/2 lb butter
1 can sesame seed
6 oz can crabmeat
dried minced onion
Worcestershire sauce
20 slices white bread (gummy Taystee or Master type)

Melt cheese in 1/4 pb butter slowly.
Stir in crabmeat.
Add few shakes of minced onion and 1/4 t Worcestershire sauce.
Cut crust off bread, roll out very thin with rolling pin.
Spread heaping teaspoonful of mixture on bread, roll up and pinch edge.
Melt remaining butter, dip rolls in butter then sesame seeds. Place seam side down on cookie sheet and freeze.

When frozen place in plastic bags. When ready to serve, cut each roll into thirds, place under broiler 3 to 5 minutes until golden brown (turn to brown both sides). Serve warm. Makes 60

Hmm, can anyone tell my favorite reading material(s) are menu's and cook books?

Ok, one more and I'll quit.

Stuffed Strawberry Blossoms

1 (8 oz) cream cheese softened
1/2 C powdered sugar
1 t vanilla or almond extract (or 1 to 2 T orange liqueur)

Mix til blended well.
Put into a plastic zip baggie and cut off the tip of one corner.

1 qt clean ripe strawberries - either cut the top (green part) off flat so it "stands" evenly, then cut it in quarters starting at the tip but not cutting all the way through, spread the berries open a bit and pipe the cream cheese mixture into them. OR take the green top off and scoop out the core, pipe cream cheese into cavity.

Very yummy and pretty quick.

Now THAT sounds like a winner! I bet it'd be even better if they were dipped in chocolate afterwards! lol.

They actually are really good. I don't know how I forgot about them for so long....

If you did the "fill the core" method you could probably dip them in chocolate. Good idea FB.

Her husband makes her play soccer. She gets even by beating him.

Shrimp is highly perishable. Stay safe by boxing it up with dry ice and mailing it to my house. I will... dispose... of it for you. Heh.

This made me laugh.

And then I wondered if, unbeknownst to me, you're one of my circle of friends, iluvatar, because it sounds like you know them pretty well.

I just made them last week. I put one or two semi sweet chocolate chips in each berry before putting in the cream. It was like a little chocolate surprise. I'm not even a chocolate lover, but that combination was out of this world.

Ok, I can't help myself. Here's 2 more.

This came out of a Paula Dean cookbook, but I also saw it in the link Elena gave earlier and in that one she mentioned it was quite "popular" in the 70/80's but I don't remember ever having them. They do fit the criteria of easy, most of the stuff can be kept on hand and fairly quick to make if you use the 350* method.

Bacon Crisps

1/2 C freshly grated Parmesan cheese
1 lb bacon sliced in half
1 sleeve Waverly Wafers or buttery rectangular cracker like Club crackers

Preheat oven to 250*
Place 1 t cheese on each cracker and wrap tightly with the bacon - be sure to cover entire cracker.
Place the wrapped crackers on a broiler rack or baking sheet with a rack and bake for 2 hours or until the bacon is done- do not turn.
Drain on paper towels, serve hot or at room temp.

Paula's note also said she has done them at 350* for 40 minutes and they turned out well.

These probably don't meet any of the criteria, however they sound good .

Ham Stuffed Cherry Tomatoes

1/2 C very finely chopped cooked ham
1/4 C crumbled blue cheese
1/4 C sour cream
1/4 t lemon juice
Dash of pepper
36 cherry tomatoes

Combine ham, cheese, sour cream, lemon juice, and pepper.
Refrigerate.
Cut tomatoes in half with a sharp knife, scoop out insides.
Spoon about 1/2 t ham-cheese mixture into each tomato, mounding slightly.

Ok, now I'm off to work (or to check out more cookbooks - no really, I do have to work now )

I like taco dip. Line a pan with refried beans. Mix 16 oz of sour cream and 16 oz of cream cheese and a packet of taco seasoning. Top with grated cheese and bake at 350 until the cheese melts. Take and serve with tortilla chips.

Easy peasy.

My recipe is very close to that Tink, but it also has salsa or tomaotes and lettuce - oh ya, and black olives on top.

My dad often asked Mom to make that for him to take to his office parties. He (and "his" dip) always made a hit then. Not a bite left in the Pyrex when he brought it home!
